MISH-MASH
Preparation time: 20 minutes
Cooking time: 30 minutes
4-6 servings
250-300 g feta chees
10-15 eggs
10-15 peppers
2-3 onion
5-6 tomatoes
1 bar butter or ½ cup oil
½ bunch fresh parsley
2-3 fresh chillies (optional ) salt to taste
1. Remove the stems and the seeds of the peppers and grill on all sides over high heat. Cover the grilled peppers for a few minutes and peel them.
2. Finely chop the onion. Saute it with a little butter, salt and water. Add the chopped peppers (grilled and peeled, or raw and the finely chopped tomatoes. Fry over medium heat until all liquid evaporates.
3.Add the cheese (washed and mashed), the eggs (scrambled with a little salt), and the finely chopped parsley. Cook for several minutes. Serve hot, sprinkled with chopped parsley.
